Description

These Crispy Chicken Taquitos are a delicious Mexican-inspired appetizer featuring a flavorful chicken and cheese filling wrapped in crispy fried corn tortillas. Perfect for parties or as a fun snack!

For the filling:

  • 2 cups cooked shredded chicken
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

For assembling:

  • 12 small corn tortillas
  • vegetable oil for frying

Instructions

  1. In a large bowl, mix the chicken, cheddar cheese, sour cream, and spices until combined. Warm tortillas, then place chicken mixture in each and roll tightly.
  2. Heat oil in a skillet. Fry taquitos until crispy, about 3-4 minutes per batch.

Notes

  • To make a lighter version, bake or air fry instead of frying. Rotisserie chicken works well for convenience.
