For the filling:
- 2 cups cooked shredded chicken
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon ground cumin
- 1/4 teaspoon chili powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
For assembling:
- 12 small corn tortillas
- vegetable oil for frying
Instructions
- In a large bowl, mix the chicken, cheddar cheese, sour cream, and spices until combined. Warm tortillas, then place chicken mixture in each and roll tightly.
- Heat oil in a skillet. Fry taquitos until crispy, about 3-4 minutes per batch.
- Drain on paper towels and serve with dips.
Notes
- To make a lighter version, bake or air fry instead of frying. Rotisserie chicken works well for convenience.
