Description

  • 12 oz penne pasta
  • 1 tablespoon olive oil
  • 3 cloves garlic (minced)
  • 1 small yellow onion (diced)
  • 8 oz mushrooms (sliced)
  • 1 medium zucchini (sliced into half-moons)
  • 1/2 teaspoon crushed red pepper flakes
  • 2 cups marinara sauce
  • 1/2 cup heavy cream
  • 3 cups fresh baby spinach
  • 1/2 cup grated Parmesan cheese
  • Salt and black pepper to taste
  • Chopped fresh basil (for garnish, optional)


Instructions

  1. Cook the Penne Pasta: Cook penne pasta according to package instructions until al dente. Drain and set aside.
  2. Sauté Aromatics and Vegetables: In a large skillet, heat olive oil over medium heat. Add garlic and onion, sauté until onion is translucent. Add mushrooms, zucchini, and red pepper flakes, cook until tender.
  3. Add Sauce and Cream: Stir in marinara sauce, simmer. Reduce heat, add heavy cream, mix. Add spinach, cook until wilted. Toss in cooked penne.
  4. Finish and Serve: Add Parmesan, stir until creamy. Season with salt, pepper. Serve hot, garnished with basil.
