- 2 tablespoons balsamic vinegar
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup heavy cream
Instructions
- Cook the Pasta: Cook the pasta according to the package instructions, then drain and set aside to cool.
- Prepare Tomatoes: While the pasta is cooling, halve the cherry tomatoes and set them aside.
- Prepare Mozzarella: Cut the fresh mozzarella balls in half and place them in a large mixing bowl.
- Chop Basil: Chop the fresh basil leaves into small pieces and set them aside.
- Make Dressing: In a small bowl, whisk together the olive oil, balsamic vinegar, garlic powder, salt, and black pepper until fully combined.
- Combine Pasta and Mozzarella: Once the pasta has cooled, transfer it to the bowl with the mozzarella.
- Add Tomatoes and Basil: Add the halved cherry tomatoes and chopped basil to the bowl with the pasta and mozzarella.
- Dress the Salad: Pour the prepared dressing over the pasta, tomatoes, mozzarella, and basil, then toss everything together to coat evenly.
- Add Heavy Cream: Pour the heavy cream over the salad and toss again to combine, making sure the cream is well distributed.
- Adjust Seasoning: Taste the salad and adjust seasoning if needed, adding extra salt or pepper if desired.
- Serve or Chill: Serve the pasta salad immediately or refrigerate for about 30 minutes to allow the flavors to meld.
Notes
- Use any short pasta like rotini or penne for best results.
- Allow pasta to cool completely before mixing to prevent the mozzarella from melting.
- For a lighter version, substitute heavy cream with Greek yogurt or omit it entirely.
- Refrigerate leftovers in an airtight container for up to 2 days.
- Adding a splash of fresh lemon juice can brighten the flavors even more.
