Description

A creamy and refreshing Caprese Pasta Salad featuring tender pasta, juicy cherry tomatoes, fresh mozzarella, and aromatic basil tossed in a tangy balsamic dressing with a touch of rich heavy cream. Perfect as a light lunch or a delightful side dish for any occasion.

Ingredients

Scale

Pasta Salad

  • 2 cups cooked pasta
  • 1 cup cherry tomatoes, halved
  • 1 cup fresh mozzarella balls, halved
  • 1/4 cup fresh basil leaves, chopped

Dressing

  • 1/4 cup olive oil
  • 2 tablespoons balsamic vinegar
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup heavy cream

Instructions

  1. Cook the Pasta: Cook the pasta according to the package instructions, then drain and set aside to cool.
  2. Prepare Tomatoes: While the pasta is cooling, halve the cherry tomatoes and set them aside.
  3. Prepare Mozzarella: Cut the fresh mozzarella balls in half and place them in a large mixing bowl.
  4. Chop Basil: Chop the fresh basil leaves into small pieces and set them aside.
  5. Make Dressing: In a small bowl, whisk together the olive oil, balsamic vinegar, garlic powder, salt, and black pepper until fully combined.
  6. Combine Pasta and Mozzarella: Once the pasta has cooled, transfer it to the bowl with the mozzarella.
  7. Add Tomatoes and Basil: Add the halved cherry tomatoes and chopped basil to the bowl with the pasta and mozzarella.
  8. Dress the Salad: Pour the prepared dressing over the pasta, tomatoes, mozzarella, and basil, then toss everything together to coat evenly.
  9. Add Heavy Cream: Pour the heavy cream over the salad and toss again to combine, making sure the cream is well distributed.
  10. Adjust Seasoning: Taste the salad and adjust seasoning if needed, adding extra salt or pepper if desired.
  11. Serve or Chill: Serve the pasta salad immediately or refrigerate for about 30 minutes to allow the flavors to meld.

Notes

  • Use any short pasta like rotini or penne for best results.
  • Allow pasta to cool completely before mixing to prevent the mozzarella from melting.
  • For a lighter version, substitute heavy cream with Greek yogurt or omit it entirely.
  • Refrigerate leftovers in an airtight container for up to 2 days.
  • Adding a splash of fresh lemon juice can brighten the flavors even more.
