- Preheat and Bake Potatoes: Preheat your oven to 425°F (220°C). Wash the russet potatoes thoroughly and poke holes in them with a fork to allow steam to escape. Place them on a large baking sheet and bake for 60-75 minutes until they are tender and fully cooked through.
- Cook Chicken: While the potatoes bake, place the chicken breasts in a slow cooker or Instant Pot. Sprinkle the ranch seasoning mix over the chicken. Cook on low for 6 hours, high for 3 hours, or pressure cook for 15 minutes if using the Instant Pot. Once cooked, shred the chicken carefully with two forks.
- Prepare Filling: In a mixing bowl, combine the shredded chicken with cream cheese, diced cooked turkey bacon, and shredded sharp cheddar cheese. Stir until the mixture is well combined and creamy.
- Stuff Potatoes: Once the potatoes are baked and cool enough to handle, slice each one open lengthwise. Fluff the insides with a fork to create a soft base. Generously stuff each potato with the prepared chicken filling.
- Final Bake: Return the stuffed potatoes to the oven, lower the temperature to 350°F (175°C), and bake for an additional 10-15 minutes. This will melt the cheese and warm everything through. Garnish as desired before serving.
