Scale
Soup Base
- 1 pound boneless, skinless chicken breasts
- 4 cups low-sodium chicken broth
- 1 packet ranch dressing mix
- 8 ounces cream cheese
Add-ins
- 1 cup shredded cheddar cheese
- 1 cup chopped green onions
- Salt and pepper to taste
Instructions
- Cook the Chicken: In a large pot, combine chicken breasts and chicken broth. Bring to a boil over medium heat.
- Simmer Chicken: Reduce heat and simmer for about 20 minutes until the chicken is cooked through.
- Shred Chicken: Remove the chicken from the pot, shred it finely using two forks, then return the shredded chicken back to the pot.
- Add Ranch and Cream Cheese: Stir in the ranch dressing mix and cream cheese until fully combined, creating a creamy base.
- Simmer Soup: Continue to simmer the soup for an additional 10 minutes, stirring occasionally to prevent sticking and ensure flavors meld.
- Add Cheese and Onions: Stir in shredded cheddar cheese and chopped green onions until the cheese is melted and the soup is heated through. Season with salt and pepper to taste before serving.
Notes
- Use low-sodium chicken broth to control salt levels better.
- For a thicker soup, add a little cornstarch slurry during the last simmer step.
- You can substitute cream cheese with Greek yogurt for a lighter version, but add it at the end off heat to prevent curdling.
- Adjust the amount of ranch seasoning according to taste preferences.
- Serve with crusty bread or crackers for a complete meal.
