Description

This Cowboy Chicken recipe is a flavorful and easy-to-make dish that combines seasoned chicken breasts with a hearty black bean and corn salsa, topped with melted cheddar cheese. A delicious meal with a Southwest twist!

  • 4 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste

For the Salsa:

  • 1 cup canned black beans, rinsed and drained
  • 1 cup corn kernels (fresh, frozen, or canned)
  • 1 cup diced tomatoes, drained
  • 1/2 cup red onion, diced
  • 1/4 cup chopped fresh cilantro
  • 1 cup shredded cheddar cheese

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C).
  2. Season Chicken: Mix chili powder, paprika, garlic powder, onion powder, salt, and pepper. Rub the chicken breasts with olive oil and coat evenly with the spice mix.
  3. Sear Chicken: Sear the chicken in an oven-safe skillet until browned.
  4. Prepare Salsa: In a bowl, combine black beans, corn, tomatoes, red onion, and cilantro. Spoon mixture over and around the chicken in the skillet.
  5. Add Cheese: Sprinkle shredded cheddar cheese on top of each chicken breast.
  6. Bake: Bake for 20–25 minutes until chicken is cooked through and cheese is melted.
  7. Serve: Let rest before serving.

Notes

  • You can use rotisserie chicken to save time—just mix the spice blend into the bean and corn mixture and bake until heated through.
