For the Chicken:
- 4 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 teaspoon chili powder
- 1 teaspoon smoked paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and pepper to taste
For the Salsa:
- 1 cup canned black beans, rinsed and drained
- 1 cup corn kernels (fresh, frozen, or canned)
- 1 cup diced tomatoes, drained
- 1/2 cup red onion, diced
- 1/4 cup chopped fresh cilantro
- 1 cup shredded cheddar cheese
Instructions
- Preheat Oven: Preheat your oven to 400°F (200°C).
- Season Chicken: Mix chili powder, paprika, garlic powder, onion powder, salt, and pepper. Rub the chicken breasts with olive oil and coat evenly with the spice mix.
- Sear Chicken: Sear the chicken in an oven-safe skillet until browned.
- Prepare Salsa: In a bowl, combine black beans, corn, tomatoes, red onion, and cilantro. Spoon mixture over and around the chicken in the skillet.
- Add Cheese: Sprinkle shredded cheddar cheese on top of each chicken breast.
- Bake: Bake for 20–25 minutes until chicken is cooked through and cheese is melted.
- Serve: Let rest before serving.
Notes
- You can use rotisserie chicken to save time—just mix the spice blend into the bean and corn mixture and bake until heated through.
