Description

Classic Apple Cobbler is a comforting dessert featuring tender, cinnamon-spiced apple filling topped with a buttery, golden biscuit crust. This easy-to-make cobbler combines fresh apples with a crisp buttermilk topping, baked to perfection—a perfect treat for any occasion.

Ingredients

Scale

Apple Filling

  • 12 cups apples, peeled, cored and diced (about 4 pounds)
  • 1/2 cup brown sugar
  • 2 tablespoons cornstarch
  • 1/2 teaspoon ground cinnamon
  • 1/4 cup apple juice

Cobbler Topping

  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 teaspoon ground cinnamon
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup cold butter, diced
  • 1 cup buttermilk

Instructions

  1. Prep: Heat the oven to 375°F. Spray a 9×13-inch baking pan with nonstick cooking spray to prevent sticking and ensure easy cleanup.
  2. Assemble filling: Place the diced apples into the prepared pan. In a small bowl, combine brown sugar, cornstarch, and ground cinnamon, then stir this mixture into the apples. Add apple juice and mix everything well to coat the apples evenly. Set this filling aside.
  3. Assemble topping: In a large mixing bowl, whisk together flour, granulated sugar, cinnamon, baking powder, and salt. Cut in the cold diced butter using a pastry cutter or fingers until the mixture resembles coarse crumbs. Slowly pour in the buttermilk and stir just until the batter is combined, being careful not to overmix.
  4. Assemble cobbler: Spoon the batter evenly over the apple filling in the baking pan, covering as much as possible. Place the pan in the preheated oven and bake for 40 to 45 minutes, or until the apple filling is bubbly and the topping is puffed up and golden brown.
  5. Rest and serve: Once baked, remove the cobbler from the oven and let it rest at room temperature for 15 to 20 minutes before serving. This resting allows the filling to thicken and the flavors to meld beautifully.

Notes

  • For extra flavor, add a pinch of nutmeg to the apple filling.
  • Use Granny Smith apples for a tart contrast or a mix of sweet and tart apples for complexity.
  • Cold butter is essential to achieve a flaky, biscuit-like topping.
  • Letting the cobbler rest after baking helps the filling set and makes serving easier.
  • Serve warm with vanilla ice cream or whipped cream for a classic dessert experience.
