Description

This Christmas Breakfast Casserole is a hearty, savory dish perfect for holiday mornings or any special breakfast occasion. Egg Mixture

  • 12 eggs
  • 1 cup milk

  • 1/2 cup red and green bell peppers, chopped

Instructions

  1. Prepare Slow Cooker: Spray the inside of an 8-quart slow cooker with nonstick cooking spray to prevent sticking and set it aside.
  2. Mix Cheese and Sausage Mixture: In a small bowl, combine the shredded cheddar and pepper jack cheeses. In another bowl, mix the cooked sausage with the chopped bell peppers and onions. Set both mixtures aside.
  3. Whisk Egg Mixture: In a medium-sized bowl, whisk together the eggs until fully blended. Add the milk, salt, and black pepper, whisking until combined. Set aside.
  4. Layer the Casserole: Place about one-third of the hash brown potatoes evenly on the bottom of the slow cooker. Sprinkle one-third of the sausage and vegetable mixture over the potatoes. Then add approximately 1 cup of the shredded cheese blend on top. Repeat these layers two more times, ending with a final cheese layer on top.
  5. Add Egg Mixture and Cook: Pour the prepared egg mixture evenly over the layered ingredients in the slow cooker. Cover and cook on low heat for 8 hours, preferably overnight. The casserole will set and develop rich flavors during this slow cooking process.
