Description

Chicken:

  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces

Other Ingredients:

  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 1 small yellow onion, finely chopped
  • 3 cloves garlic, minced
  • 8 oz cremini or white mushrooms, sliced
  • 1 tablespoon all-purpose flour
  • 1 cup low-sodium chicken broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon Dijon mustard
  • 1/2 cup sour cream
  • Salt and freshly ground black pepper to taste
  • Fresh parsley, chopped (for garnish)
  • Cooked egg noodles or rice, for serving


Instructions

  1. Cook the Chicken: Heat olive oil, sauté chicken until golden and cooked through, then set aside.
  2. Prepare the Sauce: Sauté onion and garlic, add mushrooms, sprinkle flour, pour in broth, add Worcestershire sauce and mustard, simmer until thickened. Stir in sour cream.
  3. Combine and Serve: Return chicken to skillet, heat through, adjust seasoning, serve over noodles or rice, garnished with parsley.
