Instructions
- Preheat Oven: Preheat your oven to 375 degrees F (190 C) to prepare for baking the galette.
- Prepare Filling: In a large mixing bowl, combine the cherries, blueberries, cane sugar, flour, fresh lemon juice, and lemon zest. Stir gently to mix all the ingredients evenly.
- Roll Out Crust: Roll out the pie crust dough into a 12-inch round shape. Place the dough on a piece of parchment paper laid on a baking sheet.
- Assemble Galette: Spoon the cherry and blueberry filling into the center of the dough round, leaving about a 2-inch border around the edges.
- Fold Edges: Fold the edges of the crust up over the fruit, slightly overlapping the dough to create a rustic crust border that encloses some of the filling.
- Brush Egg Wash: Beat the egg in a small bowl and brush it over the dough edges to help achieve a golden brown finish during baking.
- Bake: Place the galette in the preheated oven and bake for 40 to 50 minutes, or until the crust is golden brown and the filling is bubbling.
- Cool and Serve: Remove the galette from the oven and let it cool for about 10 minutes before slicing and serving to allow the filling to set.
