Description

These Cheesecake Fruit Salad Roll Ups are a delightful no-bake dessert featuring soft flour tortillas layered with a rich, creamy cheesecake filling and fresh chopped fruit. Rolled and sliced into bite-sized pinwheels, they make perfect sweet treats for parties, brunch, or quick snacks. Easy to prepare and fully customizable with your favorite fruits, these roll ups are ready in minutes and require no oven baking.

Ingredients

Scale

Cheesecake Filling

  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 cup Cool Whip or whipped cream

Fruit Filling

  • 2 cups fresh fruit (such as strawberries, blueberries, peaches), washed and diced
  • 1-2 tbsp granulated sugar (optional, to toss with fruit)

Assembly

  • 8-10 soft flour tortillas
  • Cinnamon sugar (optional, for rolling edges)

Instructions

  1. Make the cheesecake filling: In a mixing bowl, beat the softened cream cheese until smooth and creamy. Add powdered sugar and vanilla extract, mixing well until combined and smooth.
  2. Fold in whipped topping: Gently fold in the Cool Whip or whipped cream until the mixture is light and fluffy, creating a creamy, airy cheesecake filling.
  3. Prep the fruit: Wash and dice the fresh fruit into small pieces. Pat dry with paper towels to remove excess moisture. Optionally, toss the fruit with granulated sugar to enhance sweetness.
  4. Assemble roll ups: Lay a flour tortilla flat on a clean surface. Spread 2 to 3 tablespoons of the cheesecake filling evenly over the entire surface of the tortilla. Sprinkle 2 to 3 tablespoons of the prepared fruit evenly on top of the filling.
  5. Roll and chill: Roll the tortilla tightly like a jelly roll, ensuring the seam is on the bottom to keep it closed. Wrap each roll in plastic wrap to keep them firm and place in the refrigerator. Chill for at least 1 hour to allow the filling to set.
  6. Slice and serve: Remove the rolls from the refrigerator and unwrap. Using a sharp knife, slice each roll into 1-inch wide pinwheels. Optionally, roll the edges of each pinwheel in cinnamon sugar for extra flavor. Serve chilled for best taste and texture.

Notes

  • Use a variety of fruits according to season and preference, such as mango, kiwi, or grapes.
  • For a lower sugar version, omit the granulated sugar tossed with fruit and reduce powdered sugar in filling.
  • These roll ups can be prepared a day in advance and kept refrigerated, making them ideal for meal prep and entertaining.
  • To make it gluten-free, substitute the flour tortillas with gluten-free tortillas.
  • Ensure cream cheese is softened for easier mixing and smoother filling.
