  • 2 stalks celery, sliced
  • 1 small green cabbage, cored and chopped

Seasonings and Broth:

  • 1 can (14.5 oz) diced tomatoes with juice
  • 6 cups vegetable broth
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt (or to taste)
  • 1/4 teaspoon black pepper
  • 1 bay leaf
  • 1 tablespoon lemon juice

Garnish:

  • Optional fresh parsley for garnish

Instructions

  1. Prepare the Base: Heat olive oil in a large pot over medium heat. Sauté onion until softened, then add garlic and cook until fragrant.
  2. Cook Vegetables: Add carrots and celery, cook for 5 minutes. Stir in cabbage and cook until wilted.
  3. Add Seasonings: Mix in tomatoes, broth, oregano, basil, paprika, salt, pepper, and bay leaf. Bring to a boil, then simmer for 25-30 minutes.
  4. Finish Soup: Remove bay leaf, stir in lemon juice, adjust seasoning. Serve hot, garnished with parsley.

Notes

  • For added flavor, sauté chopped bacon or sausage with the onion.
  • This soup tastes even better the next day. Add rice, beans, or chicken for a heartier meal.
