- 1 small green cabbage, cored and chopped
Seasonings and Broth:
- 1 can (14.5 oz) diced tomatoes with juice
- 6 cups vegetable broth
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon paprika
- 1/2 teaspoon salt (or to taste)
- 1/4 teaspoon black pepper
- 1 bay leaf
- 1 tablespoon lemon juice
Garnish:
- Optional fresh parsley for garnish
Instructions
- Prepare the Base: Heat olive oil in a large pot over medium heat. Sauté onion until softened, then add garlic and cook until fragrant.
- Cook Vegetables: Add carrots and celery, cook for 5 minutes. Stir in cabbage and cook until wilted.
- Add Seasonings: Mix in tomatoes, broth, oregano, basil, paprika, salt, pepper, and bay leaf. Bring to a boil, then simmer for 25-30 minutes.
- Finish Soup: Remove bay leaf, stir in lemon juice, adjust seasoning. Serve hot, garnished with parsley.
