Ingredients
Scale
Pancake Batter
- 1 cup all-purpose flour
- 1 tablespoon brown sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup buttermilk
- 1 large egg
- 2 tablespoons unsalted butter, melted
- 1 teaspoon vanilla extract
- 1 large ripe banana, mashed
For Serving
- Sliced bananas
- Maple syrup
- Additional butter
Instructions
- Mix Dry Ingredients: In a large bowl, whisk together the flour, brown sugar, baking powder, baking soda, and salt until well combined.
- Combine Wet Ingredients: In a separate bowl, mix together the buttermilk, egg, melted butter, and vanilla extract until smooth.
- Make the Batter: Pour the wet ingredients into the dry ingredients and stir just until combined. Then gently fold in the mashed banana, making sure not to overmix to keep pancakes tender.
- Preheat Skillet: Heat a non-stick skillet or griddle over medium heat and lightly grease it with butter or cooking spray to prevent sticking.
- Cook Pancakes: Pour approximately 1/4 cup of batter for each pancake onto the skillet. Cook for 2-3 minutes until bubbles form on the surface and edges appear set. Flip carefully and cook for another 1-2 minutes until golden brown and cooked through.
- Keep Warm: Place cooked pancakes in a low oven to keep warm while you finish cooking the remaining batter.
- Serve: Serve the pancakes warm topped with sliced bananas, maple syrup, and additional butter as desired.
Notes
- For extra fluffiness, do not overmix the batter; some lumps are okay.
- Use ripe bananas for maximum sweetness and flavor.
- You can substitute buttermilk with regular milk plus 1 tablespoon vinegar or lemon juice if needed.
- To keep pancakes warm without drying, set your oven to around 200°F (95°C).
- Adjust the heat as needed to avoid burning the pancakes.
