Description

Yogurt Base

  • 1 cup Greek yogurt (full-fat for creaminess)
  • 1/2 tsp vanilla extract
  • Extra honey or maple syrup to taste (optional)

Blueberry Compote

  • 1/2 cup blueberries (fresh or frozen)
  • 2 tbsp honey or maple syrup
  • 1 tsp lemon juice
  • 1 tsp cornstarch (optional, for thickening)
  • 1 tbsp water (to mix with cornstarch, if using)


Instructions

  1. Make the Blueberry Compote: In a small saucepan over medium heat, combine the blueberries, honey or maple syrup, and lemon juice. Simmer for about 5 minutes, stirring occasionally, until the blueberries soften and break down slightly. If using cornstarch, dissolve it in 1 tablespoon of water and stir into the simmering berries to thicken. Let the compote cool completely before using.
  2. Prepare the Yogurt Base: In a mixing bowl, stir the Greek yogurt and vanilla extract together until smooth and creamy. Taste and add extra honey or maple syrup if you prefer a sweeter flavor.
  3. Fill the Molds: Spoon the yogurt mixture into silicone molds or a mini muffin tin, filling each cavity about three-quarters full to leave space for the swirl.
  4. Add the Blueberry Swirl: Place a small spoonful of the cooled blueberry compote on top of each yogurt-filled mold. Use a toothpick or skewer to gently swirl the compote into the yogurt, creating a marbled, artistic effect.
  5. Freeze: Transfer the molds to the freezer and freeze for at least 3 hours, or until the bites are solid and fully set.
  6. Unmold and Serve: Once frozen, pop the yogurt bites out of their molds and transfer them to an airtight container. Keep stored in the freezer, and let each bite sit at room temperature for 2–3 minutes before eating to achieve the best texture.

Notes

  • Use full-fat Greek yogurt for a creamier texture, but low-fat works as well if preferred.
  • The cornstarch in the blueberry compote is optional; it thickens the mixture for a better swirl effect.
