- 8 ounces goat cheese log, cut into 6 pieces

- Make Blueberry Sauce: In a medium-sized bowl, combine the blueberries and honey or your chosen sweetener. Microwave the mixture for 30 to 60 seconds until the blueberries start to expand and some burst. Using a slotted metal spoon or potato masher, mash the berries to create a thick sauce. Stir in the lemon juice, vanilla extract, and a pinch of salt. Place the sauce in the freezer for 15 to 20 minutes to cool completely.
- Mix Goat Cheese: Cut the goat cheese log into 6 pieces. Add these pieces to the cooled blueberry sauce, gently mixing until just combined, leaving some chunks of goat cheese intact for texture. If the mixture is too soft, return it to the freezer for an additional 15 minutes to firm up.
- Form into Log: Lay two 15-inch pieces of plastic wrap on a flat surface in a plus sign formation. Place the blueberry goat cheese mixture onto the center of the horizontal plastic wrap, shaping it into a log. Wrap the mixture tightly with the horizontal piece, then wrap again with the vertical piece, twisting the ends to seal and maintain the log shape.
- Chill: Refrigerate the wrapped log for 2 to 4 hours to allow it to firm up, or alternatively freeze for 30 to 45 minutes. Before serving, bring the log to room temperature. Serve with crackers and enjoy this creamy, fruity appetizer.
