Ingredients
Scale
Fish and Seasoning
- 3-4 tablespoons blackened seasoning (store-bought or homemade)
- 1.5 pounds cod fillets (or substitute with other white fish like tilapia or haddock)
- 2 tablespoons butter
Toppings and Serving
- Jalapeno slaw (to taste)
- 12 corn tortillas
- Lime wedges (for squeezing)
- Avocado slices (optional, to taste)
Instructions
- Season the Fish: Sprinkle the blackened seasoning evenly over both sides of the cod fillets. Allow the seasoned fish to rest while you prepare the jalapeno slaw to let the flavors meld.
- Prepare the Slaw: Make your jalapeno slaw according to your preferred recipe or use a pre-made version for convenience.
- Cook the Fish: Heat a skillet over medium-high heat and melt the butter. Once hot, add the seasoned cod fillets and cook for 3-5 minutes per side, or until the fish flakes easily with a fork. Be careful not to overcook. After cooking, break the fish into pieces with your fork and keep it warm in the skillet; it will continue cooking slightly off the heat.
- Assemble the Tacos: Warm the corn tortillas in a skillet or microwave. Fill each tortilla with the blackened fish, top with the jalapeno slaw, add avocado slices if using, and finish with a squeeze of fresh lime juice. Serve immediately.
Notes
- You can substitute cod with other flaky white fish such as tilapia or haddock depending on availability.
- Warm the corn tortillas before assembling to make them more pliable and enhance flavor.
- Adjust the amount of blackened seasoning to suit your spice preference.
- The avocado topping is optional but adds a creamy texture that complements the spicy slaw.
