Description

Berry Yogurt Bark is a simple and refreshing frozen treat made by spreading creamy vanilla yogurt topped with fresh mixed berries into a thin layer, then freezing it until firm. This no-bake snack is perfect for a healthy dessert or a cool summer snack, combining the natural sweetness of vanilla yogurt with the vibrant flavors of strawberries, blueberries, blackberries, and raspberries.

Ingredients

Scale

Yogurt Base

  • 1 1/2 cups full fat vanilla yogurt

Berries

  • 1/2 cup sliced fresh strawberries
  • 1/4 cup fresh blueberries
  • 1/4 cup fresh blackberries
  • 1/4 cup fresh raspberries

Instructions

  1. Prepare the Base: Spread the vanilla yogurt into a thin, even layer approximately 1/8 inch thick on a parchment paper-lined, rimmed sheet pan to ensure easy removal after freezing.
  2. Add the Berries: Evenly distribute and gently press the fresh mixed berries—strawberries, blueberries, blackberries, and raspberries—across the surface of the yogurt layer, ensuring good coverage.
  3. Freeze: Place the sheet pan in the freezer and freeze the yogurt bark for at least 3 hours, or until it is completely firm to the touch.
  4. Serve: Remove the frozen yogurt bark from the sheet pan by lifting the parchment paper, then break it into irregular pieces or use a sharp knife to cut it into squares for serving.

Notes

  • Use full fat vanilla yogurt for creaminess and flavor; low-fat or Greek yogurt can be substituted but may alter texture.
  • Ensure the yogurt layer is evenly spread for uniform freezing and easy breaking.
  • Fresh berries provide the best texture; frozen berries may release excess moisture.
  • Store leftover yogurt bark in an airtight container in the freezer for up to one week.
  • This recipe is easily customizable with different fruit toppings like kiwi, mango, or pomegranate seeds.
