Ingredients
Scale
Meat and Vegetables
- 2 lbs ground beef
- 1 medium onion, finely cubed
- 1 large carrot, cubed
- ½ medium green bell pepper, cubed
- 3 garlic cloves, minced
Canned Goods and Liquids
- 14.5 oz can diced tomatoes
- 15.5 oz can kidney beans, drained and rinsed
- 3 cups beef broth
Seasonings
- 1 ½ tsp ground cumin
- 2 tsp granulated sugar
- 2 tsp salt
- ½ tsp ground pepper
- 2 ½ tsp chili powder
Instructions
- Brown the Beef: In a Dutch oven over medium-high heat, brown the ground beef while breaking it up with a spatula, stirring frequently to ensure even cooking.
- Cook Onion: Add the finely cubed onion to the beef and cook until the onion becomes tender and translucent.
- Sauté Vegetables: Stir in the diced carrot, green bell pepper, and minced garlic. Cook until the vegetables soften, stirring as needed. Drain any excess fat from the pot to keep the chili from being greasy.
- Add Tomatoes, Beans, Broth and Spices: Pour in the diced tomatoes with their juice, add the drained kidney beans and beef broth. Sprinkle in cumin, sugar, salt, pepper, and chili powder. Stir everything thoroughly to combine all flavors.
- Simmer the Chili: Reduce the heat to maintain a gentle boil and let the chili cook uncovered for 15 to 20 minutes, stirring occasionally. This allows the flavors to meld and the meat and vegetables to reach desired tenderness.
- Final Seasoning and Resting: Taste the chili and adjust seasonings if necessary. Turn off the heat and let the chili rest for 5 minutes before serving to deepen the flavors.
Notes
- For a thicker chili, allow it to simmer uncovered longer, stirring occasionally.
- Drain the fat carefully to avoid greasy chili but retain enough for flavor.
- Use fresh garlic and vegetables for best taste and texture.
- Adjust chili powder according to preferred spice level.
- Serve with shredded cheese, sour cream, or fresh cilantro for added flavor.
