Batter Ingredients
- 2 ripe bananas, mashed
- 1 egg
- ¼ cup melted butter or oil
- â…“ cup brown sugar
- 1 tsp vanilla extract
- 1 cup all-purpose flour
- ½ tsp baking soda
- ½ tsp baking powder
- ¼ tsp salt
- ½ tsp cinnamon (optional)
Honey Butter Topping
- ¼ cup softened butter
- 2 tbsp honey
- Pinch of cinnamon (optional)
Instructions
- Preheat and prepare pan: Preheat your oven to 350°F (175°C). Grease a mini muffin tin or line it with mini paper cups to prevent sticking.
- Mix wet ingredients: In a bowl, combine the mashed ripe bananas, egg, melted butter or oil, brown sugar, and vanilla extract. Mix until smooth and well combined.
- Add dry ingredients: Stir in the all-purpose flour, baking soda, baking powder, salt, and optional cinnamon to the wet mixture. Mix gently until just combined; do not overmix to ensure soft bites.
- Scoop and bake: Spoon the batter evenly into the prepared mini muffin tin compartments. Bake in the preheated oven for 12 to 15 minutes, or until a toothpick inserted into the center comes out clean.
- Make honey butter: While the bites bake, whip together softened butter, honey, and a pinch of cinnamon (if using) until light and fluffy to create the honey butter topping.
- Serve: Remove the banana bread bites from the oven and allow them to cool slightly. Serve warm or at room temperature with a dollop of the freshly whipped honey butter spread on top.
Notes
- Use ripe bananas with brown spots for the best natural sweetness and flavor.
- Do not overmix the batter to keep the bites light and tender.
- The cinnamon is optional but adds a warm spice that complements the banana nicely.
- You can substitute melted butter with a neutral oil to make the bites dairy-free, but the honey butter topping will contain dairy.
- Store leftovers in an airtight container at room temperature for up to 2 days or refrigerate for up to a week.
- Reheat bites briefly in the microwave before serving for a warm treat.
