Description

These Baked Parmesan Zucchini Fries are a delicious and healthier alternative to traditional fries. Crispy on the outside with a flavorful parmesan and Italian seasoning crust, and tender on the inside, they make a perfect snack or side dish. The fries are coated with a seasoned flour mixture, dipped in egg, and then breaded before baking to golden brown perfection in the oven.

Flour Mix

  • 1/3 cup flour
  • 1/2 teaspoon garlic powder

Egg Wash

  • 1 large egg, beaten

Parmesan Breadcrumb Mix

  • 3/4 cup breadcrumbs
  • 1/3 cup grated Parmesan cheese
  • 1 tablespoon Italian seasoning
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • Ground black pepper, to taste

Zucchini

  • 1 pound zucchini, cut into 1/2-inch sticks


Instructions

  1. Prep: Preheat the oven to 425°F (220°C). Lightly coat a baking sheet with oil or cooking spray. For easier cleanup, you may line the sheet with aluminum foil, but avoid silicone baking mats or parchment paper as these will cause the fries to become soggy.
  2. Prepare breading: In a shallow dish or large zip-lock bag, combine the flour, garlic powder, and salt for the flour mix. In a separate shallow dish, beat the egg until smooth. In a third shallow dish or baking pan, mix together the breadcrumbs, grated Parmesan, Italian seasoning, garlic powder, salt, and ground black pepper.
  3. Coat zucchini: Dip each zucchini stick first into the flour mix, ensuring a thin but even coating. Next, dip them into the beaten egg. Finally, press each piece thickly into the Parmesan breadcrumb mixture to coat thoroughly on all sides.
  4. Bake: Arrange the coated zucchini fries in a single layer on the prepared baking sheet. Bake in the preheated oven for 20 minutes, flipping once halfway through, until they are crispy and golden brown. If fries stick to the baking sheet, gently loosen them with an offset spatula rather than tearing. Serve immediately with your favorite dipping sauces.
