A savory and indulgent Bacon, Egg, and Mushroom Tart featuring flaky puff pastry filled with a creamy mixture of eggs, sour cream, Dijon mustard, gruyere cheese, sautéed mushrooms, and crispy bacon. Perfect for brunch or a comforting meal any time of day.

Egg Mixture
- 5 eggs
- 1 tbsp Dijon mustard
- 2 tbsp thick sour cream or creme fraiche (or substitute with mayonnaise)
- 2/3 cup grated gruyere cheese, divided (2 x 1/3 cup, or any other melting cheese)
- Salt and pepper, to taste
Pastry and Toppings
- 1 sheet store-bought frozen puff pastry, thawed (25 cm x 25 cm / 10″ x 10″)
- 1 tbsp butter (salted or unsalted)
- 5 oz / 150 g mushrooms, sliced (approximately 2 cups sliced)
- 6 – 8 oz / 200 – 250 g bacon, roughly chopped
Instructions
- Preheat and Prepare Baking Tray: Preheat your oven to 180°C (350°F). Lightly spray a baking tray with oil to prevent sticking.
- Sauté Mushrooms: In a skillet over medium heat, melt the butter. Add the sliced mushrooms and sauté until they release their moisture and become golden brown, about 5-7 minutes. Remove from heat and set aside.
- Cook Bacon: In the same pan or a separate skillet, cook the roughly chopped bacon over medium heat until crispy. Drain on paper towels to remove excess fat.
- Prepare Egg Mixture: In a mixing bowl, whisk together the eggs, Dijon mustard, sour cream (or creme fraiche/mayonnaise), half of the grated gruyere cheese, and salt and pepper to taste. Mix until smooth and well combined.
- Assemble Tart: Place the thawed puff pastry sheet on the prepared baking tray. Spread the sautéed mushrooms evenly over the pastry, then sprinkle the crispy bacon pieces on top. Pour the egg mixture evenly over the mushroom and bacon layer, then sprinkle with the remaining gruyere cheese.
- Bake the Tart: Place the tart in the preheated oven and bake for 18-20 minutes, or until the pastry is golden brown and the egg filling is set and slightly puffed.
- Serve: Allow the tart to cool slightly before slicing into 4 portions. Serve warm for the best flavor and texture.
Notes
- Make sure to thaw the puff pastry completely before assembling the tart to ensure even cooking.
- You can substitute gruyere cheese with cheddar, mozzarella, or any good melting cheese you prefer.
- For a vegetarian version, omit the bacon and add more mushrooms or your favorite vegetables.
- Use salted or unsalted butter according to your taste preference; adjust the added salt accordingly since bacon and cheese add saltiness.
