Description

A quick and flavorful 15-minute Garlic Shrimp Zoodles recipe featuring tender shrimp and fresh zucchini noodles sautéed in a garlic-lemon sauce. Perfect for a light, low-carb meal packed with protein and vibrant flavors.

Ingredients

Scale

Vegetables

  • 2 medium zucchini
  • 3-4 cloves garlic, minced
  • Chopped fresh parsley, for garnish

Seafood

  • 3/4 pounds medium shrimp, peeled and deveined

Other Ingredients

  • 1 tablespoon olive oil
  • Juice and zest of 1 lemon
  • Red pepper flakes (optional, to taste)
  • Salt and pepper, to taste

Instructions

  1. Spiralize Zucchini: Using a spiralizer on the medium setting, create zucchini noodles from the 2 medium zucchinis. Set aside the zoodles while you prepare the shrimp.
  2. Cook Shrimp: Heat 1 tablespoon olive oil in a skillet over medium heat. Add the lemon juice and lemon zest to the skillet. Once the pan is warm, add the peeled and deveined shrimp. Cook the shrimp for approximately one minute on each side until pink and opaque.
  3. Add Garlic and Spices: Stir in the minced garlic and red pepper flakes (if using). Continue cooking for an additional minute, stirring often to prevent the garlic from burning and to infuse flavor into the shrimp.
  4. Toss in Zucchini Noodles: Add the spiralized zucchini noodles to the skillet. Stir and toss constantly, using tongs or a spatula, for 2 to 3 minutes until the zoodles are just slightly softened and warmed through but still retain a bit of crunch.
  5. Season and Serve: Season the dish with salt and freshly ground black pepper to taste. Sprinkle chopped fresh parsley over the top for garnish. Serve the garlic shrimp zoodles immediately while hot.

Notes

  • Do not overcook the zucchini noodles to prevent them from becoming mushy.
  • For extra flavor, consider adding a splash of white wine or a pinch of smoked paprika while cooking the shrimp.
  • If you prefer a spicier dish, increase the amount of red pepper flakes or add a dash of cayenne pepper.
  • This recipe is perfect for a low-carb or keto-friendly diet.
  • Make sure shrimp are properly peeled and deveined for the best texture and taste.
